Ingredients:
– 1 kg beef, cut into cubes
– 4 cups coconut milk
– 2 stalks lemongrass, bruised
– 5 kaffir lime leaves
– 4 cm galangal, sliced
– 4 cm ginger, sliced
– 10 dried red chilies, soaked and deseeded
– 6 shallots
– 4 cloves garlic
– 1 tsp turmeric powder
– 1 tsp coriander powder
– 1 tsp cumin powder
– 1 tsp fennel powder
– Salt and sugar to taste
– Cooking oil
Instructions:
– In a blender, combine lemongrass, kaffir lime leaves, galangal, ginger, dried chilies, shallots, garlic, turmeric powder, coriander powder, cumin powder, fennel powder, salt, and sugar. Blend into a smooth paste.
– Heat some cooking oil in a pot and sauté the spice paste until fragrant.
– Add the beef cubes and cook until they change color.
– Pour in the coconut milk and bring to a boil.
– Lower the heat and simmer for 2-3 hours or until the beef is tender and the sauce thickens.
– Stir occasionally to prevent burning.
– Adjust seasoning with salt and sugar if needed.
– Once the beef is tender and the sauce has reduced, the Rendang is ready to be served.
