– 2 cups long-grain white rice
– 1 whole chicken, cut into pieces
– 1 onion, finely chopped
– 1 bell pepper, diced
– 3 cloves of garlic, minced
– 1 can diced tomatoes
– 2 cups chicken broth
– 1 teaspoon cumin
– 1 teaspoon oregano
– Salt and pepper to taste
– 1/4 cup olive oil
– 1/4 cup green olives
– 1/4 cup capers
– 1/4 cup chopped fresh cilantro
Instructions:
1. In a large skillet, heat the olive oil over medium heat.
2. Season the chicken pieces with salt and pepper and brown them in the skillet for about 5 minutes on each side. Remove and set aside.
3. In the same skillet, sauté the onions, bell pepper, and garlic until softened.
4. Stir in the diced tomatoes, cumin, oregano, and chicken broth. Bring to a simmer.
5. Add the rice to the skillet and stir well to combine. Place the chicken pieces on top of the rice mixture.
6. Cover and let it simmer for about 20 minutes, or until the rice is cooked and the chicken is tender.
7. Stir in the green olives, capers, and chopped cilantro. Adjust seasoning with salt and pepper if needed.
