– 1 1/2 cups graham cracker crumbs
– 1/3 cup melted butter
– 1/4 cup sugar
– 16 oz cream cheese, softened
– 1/2 cup sugar
– 2 eggs
– 1/4 cup sour cream
– 1 tsp vanilla extract
– 1/2 cup raspberry preserves
– 1/2 cup dark chocolate chips
Instructions:
1. Preheat your oven to 350°F.
2. In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of sugar. Press mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
3. In a large mixing bowl, beat cream cheese and 1/2 cup of sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract.
4. Pour half of the cream cheese mixture onto the crust. Dollop raspberry preserves on top and swirl with a knife. Pour remaining cream cheese mixture on top.
5. In a small microwave-safe bowl, melt dark chocolate chips in 30-second intervals until smooth. Drizzle chocolate over the top of the cheesecake and swirl with a knife.
6. Bake the cheesecake for 45-50 minutes, or until the center is almost set. Turn off the oven and let the cheesecake cool with the door cracked open for 1 hour.
7. Refrigerate the cheesecake for at least 4 hours, or until completely chilled. Serve and enjoy this decadent and indulgent dessert for special occasions!
