– 1 cup white rice
– 1 cup coconut milk
– 1 cup water
– Zest and juice of 2 limes
– 1/4 cup chopped fresh cilantro
– Salt to taste
Instructions:
1. In a medium saucepan, combine the coconut milk, water, lime zest, and a pinch of salt. Bring to a boil over medium heat.
2. Stir in the rice, reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and most of the liquid is absorbed.
3. Remove from heat and let the rice sit, covered, for 5 minutes to steam.
