– 4 chicken breasts
– 1 cup fresh basil leaves
– 2 cloves garlic
– 1/4 cup pine nuts
– 1/4 cup grated parmesan cheese
– 1/4 cup olive oil
– Salt and pepper, to taste
– Toothpicks
Instructions:
1. Preheat oven to 375°F (190°C).
2. In a food processor, combine basil, garlic, pine nuts, parmesan cheese, olive oil, salt, and pepper. Blend until smooth and well combined to make the pesto mixture.
3. Slice a pocket into each chicken breast, being careful not to cut all the way through.
4. Stuff each chicken breast with a generous amount of the pesto mixture. Secure the opening with toothpicks.
5. Season the outside of the chicken breasts with salt and pepper.
6. Heat a large skillet over medium-high heat and add a drizzle of olive oil. Sear the chicken breasts on both sides until browned, about 3-4 minutes per side.
7. Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
