*Ingredients*
– 2 cups jasmine rice
– 1 lb chicken, cut into pieces
– 1 onion, chopped
– 1 bell pepper, diced
– 3 cloves garlic, minced
– 1 cup tomato paste
– 2 tomatoes, diced
– 1 tsp ginger, grated
– 1 tsp curry powder
– 1 tsp thyme
– 1 tsp paprika
– 2 cups chicken broth
– Salt and pepper to taste
– Vegetable oil
*Instructions*
1. In a large pot, heat vegetable oil over medium heat and brown the chicken pieces. Remove and set aside.
2. In the same pot, add more oil if needed and sauté onions, bell pepper, and garlic until softened.
3. Add tomato paste, diced tomatoes, ginger, curry powder, thyme, paprika, salt, and pepper. Cook for about 5 minutes.
4. Stir in the rice until well coated with the tomato mixture.
5. Add the chicken back to the pot and pour in the chicken broth. Bring to a boil.
6. Reduce heat, cover, and simmer for about 20-25 minutes or until the rice is cooked and the liquid is absorbed.
7. Fluff the rice with a fork and serve hot.
