Set the station
Use a stable vessel, keep handles turned inward, clear the work area, and have a rack, tools, and thermometer ready. Keep children and pets away from the stove.
Respect water and hot oil
Dry food before it meets hot oil. Never add water to an oil fire; turn off heat if safe, cover with a metal lid, and follow local fire-safety guidance. If a fire grows or you are unsure, leave and call emergency services.
Check doneness
Color alone cannot establish that meat, poultry, or seafood is safe to eat. Use a calibrated food thermometer and current authoritative food-safety guidance for the ingredient.
Cool before cleanup
Never carry a pot of hot oil across the kitchen or pour it down a drain. Let it cool completely before straining, storing, or disposing.
Good frying is repeatable. Start with one small change next time you cook and notice what it does.
